The sun is out today in Saugatuck!! The Big Lake is sparkling. The
temperature is a glorious 45 degrees.
Weather predictions are for an early Spring here with temperatures
reaching the mid-50's in Mid-March, upwards to the 60's in the early days
of April, and the 70's by mid-May. If we can believe any future
predictions for our weather, June/July/August and September will be in the
70's and low 80's . . . perfect weather for our neighborhood. It should be
fabulous! Be sure to plan to escape to Wickwood soon.

All to say that the town is beginning to bustle early this year with
people packing Pennyroyal for creative and splendiferous dinners (and all
day long); Guardian Brewery and their terrific food pleasing all; high
anticipation for the SCA's March Film Festival; the new Modales Tasting
Room is busy; and there's painting and building going on at Isabels, the
new International Food Marketplace opening very soon.

PECAN SQUARES
The only word to describe them is "heavenly".
I'll
never forget the day that Barry and Susan Wine (later to open the
NYT 4 star Quilted Giraffe in NYC) bounded into our very humble
Silver Palate kitchen in 1978 with a tray of melt-in-your-mouth
Pecan Squares fresh from their home kitchen in New Paltz, NY. The
sweet and tender pecan squares stopped us in our tracks!
So we
stopped everything we were doing and began trial and error testing
for our own recipe. Those were the days when recipes were secrets
and the thought of asking The Wines for their’s never occurred to
us. Believe me, it was not an easy nut to crack (no pun intended).
We had days on end of butter, sugar and toasted nut aromas
tantalizing us until we finally nailed the taste we wanted. Silver
Palate Pecan Squares became part of our Repertoire, Cookbook and my
own cooking for WIckwood forever more. I don’t think The Wines have
ever been given proper credit along the way for inspiring us and so
I thank them as I share this recipe again with you.
Eaten
out of hand or slightly warmed and topped with something cool and
vanilla . . . gelato, whipped cream, crème fraiche . . . they are
simply magnificent and make as grand a finale to any meal as you
would like.

INGREDIENTS - CRUST
• Butter, for greasing the pan
• 2/3 cup confectioners' sugar
• 2 cups unbleached all-purpose flour
• 1/2 pound (2 sticks) unsalted butter, at room temperature
INGREDIENTS - TOPPING
• 2/3 cup (approximately 11 tablespoons) unsalted butter,
melted
• 1/2 cup honey
• 3 tablespoons heavy cream
• 1/2 cup light brown sugar
• 3 1/2 cups shelled pecans, coarsely chopped

DIRECTIONS
1. Preheat the oven to 350ºF. Grease a 9 x 12-inch baking pan.
2. Make the crust: Sift the sugar and flour together. Cut in the
butter, using two knives or a pastry blender, until fine crumbs
form. Pat the crust into the prepared baking pan Bake until golden
brown, 20 minutes; remove from the oven. Leave the oven on.
3. Prepare the topping: Mix the melted butter, honey, cream, and
brown sugar together. Stir in the pecans, coating them thoroughly.
Spread over the crust.
4. Return the pan to the oven and bake for 25 minutes more. Cool
completely before cutting into squares.
