The Little Town Time Forgot!

The little town time forgot

"Slow down, you move too fast. You've to make the morning last.
Just kicking down the cobblestones. Looking for fun and feelin' groovy."
--- Simon and Garfunkle

Open House Pecan Tassies

These miniature pecan tarts charm all ages and are a favorite at Wickwood. If your Grandmother didn’t leave you this recipe, treasure it. And pass it along. Makes 24 scrumptious Tassies.

l ½ cup unsalted butter, softened
l 3 ounces cream cheese
l 1 cup flour, sifted
l 1 egg, slightly beaten
l ¾ cup brown sugar
l 1 tablespoon butter, melted
l 1/8 teaspoon salt
l 1 teaspoon vanilla
l 2/3 cup pecans, chopped

1. Preheat oven to 350°F. Using a hand held mixer, cream the butter and cream cheese together and add flour continuing to mix until smooth, about 1 minute longer. Shape into 2 dozen 1” balls, press into 1¾” muffin cups.

2. In a small mixing bowl, mix the egg, brown sugar, melted butter, salt, and vanilla.

3. Divide ½ pecans among the pastry lined pans. Add filling and top with remaining pecans. Bake for 17 minutes. Reduce to 250°F and bake 10 minutes longer. Cool and remove from pan
